Preparation
Cut 2 pcs tomatoes into thin slices, and pat them dry with paper towel. Excess moisture is what makes the bread soggy in the middle.
Butter 8 slices sandwich bread with 25 g butter, and spread 2 tbsp mustard in a thin layer on top.
Place 8 slice ham on the bread, and distribute the tomato slices on top. Season with 1 tsp salt and pepper.
Sprinkle 150 g grated cheese evenly over the bread, all the way to the edges. The toasts are baked open, never folded shut – that's the whole point of an open-faced toast.
Cooking in the Air Fryer
Preheat the air fryer to 180 °C fan.
Place the toasts in the basket in a single layer without overlapping, preferably on air fryer baking paper. Bake them for 7-8 minutes at 180 °C, until the cheese bubbles and turns lightly golden at the edges.
Lift the toasts out with a palette knife, and repeat with the rest of the bread. Keep the first batch warm in the oven at 80 °C in the meantime.
Serving
Sprinkle 2 tbsp chives over the warm toasts, and serve them immediately while the cheese is still soft.

Tips for the perfect result:
Spread the cheese all the way out to the edge of the bread. That way it melts down over the rim and stays crisp instead of dry and hard.Variation:
Swap the ham for salami, roast beef or fried mushrooms. A coarse-grain mustard gives more bite than dijon, and a slice of red onion under the cheese adds sweetness.Serving:

Most air fryers can fit 3-4 slices at a time. Eight slices will typically mean two batches of 7-8 minutes. If you have a smaller air fryer, plan for three batches.
