Crispy air-fried sausages cut into thick slices and smothered in a spiced curry sauce made from tomato, curry powder and paprika. A German street food classic you'll have on the table in half an hour.
Finely chop 1 pcs onion, and get the rest of the curry sauce ingredients ready by the pot.
Preheat the air fryer to 190°C.
Curry Sauce in the Pot
Heat 1 tbsp rapeseed oil in a pot over medium heat, and sauté the onion until translucent, 3-4 minutes, without letting it brown.
Add 1 tbsp curry powder and 2 tsp sweet paprika, and toast the spices for about 30 seconds, until fragrant.
Stir 400 g chopped tomatoes, 3 tbsp ketchup, 1 tbsp soft brown sugar, 1 tbsp apple cider vinegar and 1 tsp Worcestershire sauce into the pot.
Let the sauce simmer over low heat for 12-15 minutes, stirring occasionally, until thickened and glossy. Season to taste with 1 tsp salt and pepper.
Cooking in the Air Fryer
Place 8 bratwurst in the air fryer basket in a single layer, with plenty of space between them. Don't pierce them.
Air fry the sausages at 190°C for 12 minutes. Flip them halfway through so the skin turns evenly crispy all over.
Check with a meat thermometer that the sausages have reached a core temperature of 75°C. Give them 2-3 more minutes at 190°C if they're not fully cooked through.
Serving
Cut the sausages into slices about 2cm thick on a chopping board while they're still hot.
Divide the sausage slices between plates, pour the hot curry sauce over the top, and finish with a sprinkle of 2 tsp curry powder.
Notes
Tips for perfect results:
Don't pierce the sausages before adding them to the basket. The juices stay inside the sausage, and the skin still turns crispy when you flip them halfway through.Variation:
Use hot curry powder instead of mild, or stir a pinch of cayenne pepper into the sauce if you want more of a kick.Serving:
Serve with air fryer chips, a bread roll or a bowl of potato salad on the side. The curry powder sprinkle at the end:
The dry curry powder sprinkled over the finished dish isn't just for looks. It's the signature of a proper Currywurst and adds an extra layer of spice aroma on top of the hot sauce.Portion size:
If your air fryer is smaller, you can cook the sausages in two batches and keep the first batch warm under a piece of foil.
