Crispy roasted carrots with honey and thyme from the air fryer — an easy and flavourful side dish that's ready in under half an hour. Perfect with roast, chicken or fish.
Peel the 600 g carrots and cut them into even sticks about 1 cm thick so they bake evenly.
Toss the carrots in a bowl with 2 tbsp olive oil, 1 tbsp honey, 1 tsp dried thyme, 1 tsp salt and 0.5 tsp freshly ground black pepper until all the sticks are coated.
Cooking in the air fryer
Arrange the carrots in the air fryer basket in a single layer so the air can circulate freely around each stick.
Cook for 15-18 minutes at 200 °C, shaking the basket halfway through cooking so the carrots brown evenly on all sides.
Check that the carrots are tender with a fork and have golden, caramelised edges — give them 2-3 minutes extra if you want them even crispier.
Serving
Serve the carrots immediately as a side dish for meat, poultry or fish — optionally sprinkled with a little fresh parsley or grated parmesan.
Notes
Tips for the perfect result:
Cut the carrots to an even thickness so they finish cooking at the same time. Thin sticks give more crispness, while thicker pieces keep more sweetness inside.Variation:
Try swapping the thyme for rosemary, oregano or cumin. A pinch of chilli flakes adds a pleasant kick, and a splash of balsamic towards the end adds depth.Serving:
Goes perfectly with roast beef, roast chicken, lamb chops or baked salmon. It also works as a warm salad base with feta, pomegranate seeds and a dollop of yoghurt.Portion size:
If your air fryer is smaller, you can cook the carrots in two batches and keep the first batch warm in the oven at 80 °C.
