Airfryer Avocado Bruschetta with Parma Ham and Poached Egg

This delicious airfryer breakfast is not only eye-catching, but also full of flavour. A little greenery on top of the dish is a must to complete the flavour profile.
Cut the sourdough bread into slices and brush lightly with olive oil.
Place the slices in the airfryer and set it to 180°C. Toast them for about 3-5 minutes, or until they are golden and crisp.
Prepare the Avocado:
Halve the avocados and remove the stones.
Scoop out the flesh and mash it in a bowl with a fork. Add salt and pepper to taste.
Bring a saucepan of water and 1 tbsp vinegar to the boil.
Poach the Eggs:
Crack each egg into a separate bowl.
When the water is boiling, lower the heat so it simmers.
Gently pour one egg at a time into the water and poach for 3-4 minutes, or until the egg white is set but the yolk is still runny.
Lift the eggs out with a slotted spoon and place on a plate.

Spread the mashed avocado onto the toasted bread slices.
Place a slice of Parma ham on each and top with a poached egg.
Garnish with fresh basil.

Serve immediately while the bread and eggs are still warm.
