Boil the potato cubes in a pot of water until tender.Drain the water and let them steam off for a couple of minutes.
Mash the potatoes in a bowl and add milk, butter, salt and pepper.Stir until you have a smooth mixture.
Preheat the air fryer to 200°C.(Use a preset, or let it run for a couple of minutes before cooking)
Brush a thin layer of olive oil into the bottom of the air fryer basket.Spread the mashed potatoes evenly in the basket.
Bake in the air fryer at 200°C for 15-20 minutes, or until the surface is golden and crispy.Start the online kitchen timer here

Notes
- For an extra crispy surface, you can sprinkle a thin layer of grated cheese over the mashed potatoes before baking.- The amount of milk and butter can be adjusted to your desired consistency.
