Crispy potato cubes tossed with red bell pepper, garlic, chilli and plenty of fresh coriander. The Lebanese mezze classic Batata Harra gets all its kick in the air fryer, baked in an oven-safe dish with a little olive oil.

Potatoes and vegetables

Preparation
Peel 800 g potatoes and cut them into cubes of about 2 cm. Rinse the cubes in cold water and pat them thoroughly dry with a clean tea towel.
Cut 1 pcs red bell pepper into cubes the same size as the potatoes. Finely chop 4 clove garlic and 1 pcs red chilli, and set it all aside in a bowl.
Measure 2 tbsp from 3 tbsp olive oil into an oven-safe dish and keep the rest for later. Toss the potato cubes in the dish with 1 tsp salt and 0.5 tsp black pepper, so every side is coated. Spread them out in a single layer.
Cooking in the air fryer
Preheat the air fryer to 200 °C fan, then place the oven-safe dish with the potatoes in the basket.
Bake the potatoes at 200 °C for 18 minutes. Turn them with a spoon after about 9 minutes, so they go evenly golden all over.
Add the bell pepper, garlic and chilli to the dish along with the last tablespoon of olive oil, 1 tsp ground coriander, 1 tsp sweet paprika and 1 tsp ground cumin. Toss everything together well.
Bake for a further 7 minutes at 200 °C, until the potatoes are crisp at the edges and the bell pepper is tender. Turn them gently once along the way.
Serving
Take the dish out of the air fryer and stir 20 g fresh coriander and 1 tbsp lemon juice into the hot potatoes.
Serve the Batata Harra straight away, while the potatoes are still crisp. Season to taste with a little more salt and an extra splash of lemon juice if you like.
Notes
Tips for a perfect result:
Pat the potato cubes completely dry before you toss them in the oil. Excess water steams in the dish and gives you soft edges instead of crisp ones. Use a low, wide oven-safe dish, so the potatoes can lie in a single layer.Variation:
Swap the fresh chilli for 1 tsp Aleppo chilli flakes for a milder, smoky heat, or add a handful of halved cherry tomatoes along with the bell pepper.To serve:
