Beef Wellington is a classic dish featuring a tender beef tenderloin wrapped in mushrooms, Parma ham and crispy puff pastry. This recipe is adapted for the air fryer for quicker and easier preparation.
Season 600 g Beef tenderloin with 1 tsp Salt and pepper.Quickly brown it on all sides in a hot pan with 1 tbsp Olive oil.
Brush the beef tenderloin with 1 tbsp Dijon mustard and let it cool.
Finely chop 250 g Mushrooms and fry them in a dry pan until they turn dry and lightly golden.
Place 4 slices Parma ham on a piece of plastic wrap and spread the mushroom mixture evenly on top.
Place the beef tenderloin on the mushroom mixture and roll it all up tightly using the plastic wrap.
Roll out 1 pcs Puff pastry and remove the plastic wrap from the meat. Place the meat in the middle of the puff pastry and wrap it all up.
Brush the puff pastry with beaten 1 pcs Egg.
Preheat the air fryer to 200°C. (Pre-program it, or let it run for a couple of minutes before cooking)Place the Beef Wellington in the air fryer seam-side down.Cook for 25-30 minutes or until the puff pastry is golden.Start the online kitchen timer here

Notes
It's important to make sure the puff pastry is wrapped tightly around the meat to prevent it from opening during cooking.
