Cut the cold, boiled potatoes into cubes of about 1½ cm.
Finely chop the onions and cut the cooked meat into small pieces.
Cook the biksemad in the air fryer:
Mix the potatoes, onions, and meat with the oil in a bowl so that all the cubes are coated. Season with salt and pepper.
Preheat the air fryer to 180 °C. Place the biksemad mixture in the air fryer basket. Spread it out evenly in a layer no more than 3–4 cm deep. If you have a small air fryer, cook the biksemad in 2 batches.
Air fry at 180 °C for about 15–20 minutes, stirring 2–3 times along the way, until the potatoes are golden and crispy.Start the online kitchen timer here
Cook the fried eggs:
When the biksemad has about 5 minutes left, heat a frying pan with butter or oil.
Crack the eggs into the pan and fry them as fried eggs until they are done to your liking.
Heat the béarnaise sauce:
Heat the béarnaise sauce in a small saucepan or in the microwave. Serve the biksemad with fried eggs and béarnaise, and sprinkle with fresh herbs, e.g. parsley.
Notes
Plating:
Divide the biksemad among plates.
Place a fried egg on top of each portion.
Pour béarnaise sauce over the top or serve it on the side.
Garnish with fresh herbs.
Serving:
Let the dish rest for 5 minutes before serving.
Serve warm and enjoy!
Tips:
Adjust the amount of salt and pepper to taste.
You can add extra vegetables to the biksemad, such as carrots or peas, for added flavour and nutrition.
If you prefer homemade béarnaise sauce, you can make it while the biksemad is in the air fryer.
