Blondies, also known as white brownies, are a delicious variation on the classic brownie. They're packed with white chocolate and have a wonderfully fudgy texture. This recipe uses an air fryer for quick and easy baking.
Preparation:Preheat your air fryer to 160°C. (Preheat it, or let it run for a couple of minutes before baking)
Melt the chocolate and butter:Melt 150 g white chocolate and 100 g butter together in a bowl over a water bath or in the microwave. Stir until smooth and let it cool.
Whisk the sugar and eggs:In a large mixing bowl, whisk 150 g sugar and 2 pcs eggs together until the mixture is light and fluffy. Add 1 tsp vanilla extract.
Mix the wet ingredients:Pour the cooled chocolate and butter mixture into the bowl with the sugar and eggs. Stir well.
Add the dry ingredients:Sift 200 g plain flour, 1/2 tsp baking powder and 1 tsp salt into the batter. Gently fold it together with a spatula until just combined.
Pour into the tin:Grease the baking tin and pour in the batter. Smooth the top with the spatula.
Bake in the air fryer:Place the tin in the air fryer and bake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.Start the online kitchen timer here
Let it cool:Let the blondies cool in the tin before cutting them into squares.
Notes
Be careful not to overbake the blondies — they should stay a little soft in the middle to achieve the perfect texture.
