Crispy potato fries from the air fryer, topped with marinated beef, melted cheddar and creamy guacamole. American-Mexican street food that you can easily make at home without a barbecue.

Ingredients
Marinade
3tbsplime juiceAbout 2 limes

Meat
600gflank steakCan be replaced with bavette (flap steak)
Mix 3 tbsp lime juice, 2 tbsp olive oil, 3 clove garlic, 1 tsp ground cumin, 1 tsp dried oregano, 0.5 tsp chilli flakes and 1 tsp salt in a mixing bowl to make a marinade.
Put 600 g flank steak in the marinade, turn the meat thoroughly to coat, and leave it covered in the fridge for 30 minutes.
Cut 900 g baking potatoes into sticks about 1 cm thick. Rinse the sticks in cold water, pat them completely dry, and toss them with 2 tbsp olive oil, 1 tsp smoked paprika and 1 tsp salt.
Mash 2 pcs avocado roughly with a fork, and stir in 1 tbsp lime juice, 0.5 pcs red onion and 1 pinch salt. Chill the guacamole until serving.
Cooking in the air fryer
Preheat the air fryer to 200 °C fan.
Spread the potato sticks out in a single layer in the basket, and bake them at 200 °C for 22 minutes. Shake the basket every 7-8 minutes so the sticks crisp up evenly. Keep them warm while the meat roasts.
Lift the meat out of the marinade, pat it dry, and roast it at 200 °C for 8-10 minutes. Turn it halfway through, and use a meat thermometer to check that the internal temperature is 57 °C for medium.
Leave the meat to rest on a cutting board for 5 minutes so the juices redistribute, before you cut into it.
Assembly
Cut the meat into thin slices across the grain, and then divide the slices into bite-sized pieces.
Transfer the crispy potato sticks to an oven-safe dish that fits in the air fryer, spread the meat on top, and sprinkle 150 g cheddar over. Put the dish in the air fryer at 180 °C for 3 minutes, until the cheese has melted.
Top with the guacamole, 1 dl crème fraîche 18 %, 1 pcs jalapeño and 10 g fresh coriander. Serve immediately, while the fries are still crispy.
Notes
Tips for a perfect result:
Rinse the potato sticks thoroughly, and pat them completely dry. Excess starch and water are the most common cause of soggy fries. Spread them out in a single layer, and make them in two batches rather than in an overcrowded basket.Variation:
Use bavette (flap steak), sirloin tip or a thin picanha instead of flank steak. If you want a milder dish, leave out the chilli flakes and serve jalapeño on the side instead.How to serve:
Serve with pico de gallo, pickled red onions and a lime wedge to squeeze over. A cold beer or a lemonade goes well with it.Portion size:
If your air fryer is smaller, you can make the dish in two batches.

Holdbarhed: Store the components separately in airtight containers in the fridge for up to 2 days. The guacamole is best the next day.

Frysning: Not suitable for freezing. Guacamole and crème fraîche split after thawing, and the fries turn soggy.
