These light and delicious coconut macaroons, made in an airfryer, are perfect for any coconut lover. A quick and less greasy way to enjoy this classic snack.

desiccated coconut

Instructions
Preheat the airfryer to 180°C.
(Preprogram, or let it run for a couple of minutes before cooking)
Mix
200 g desiccated coconut
,
150 g sugar
,
2 pcs eggs
and
1 tsp vanilla extract
in a bowl until well combined.
Shape the mixture into small mounds using a spoon or your hands.
Place the coconut macaroons on a piece of baking paper or directly in the airfryer basket.
Bake the coconut macaroons in the airfryer for 10-12 minutes or until golden and crisp.

Let the coconut macaroons cool on a wire rack.
If desired, you can melt
50 g dark chocolate
and dip the bottoms of the cooled coconut macaroons in it.
Notes
Airfryers can vary in efficiency, so keep an eye on the coconut macaroons to prevent them from burning.
