Danish medaljer in the Air Fryer

Danish medaljer is a classic Danish cake consisting of two crisp shortcrust pastry biscuits with a middle layer of jam and cream vanilla custard, topped with icing, whipped cream and a strawberry.

Ingredients
Shortcrust pastry:
200
g
wheat flour
100
g
butter
cold and cut into cubes
50
g
icing sugar

egg
Cream vanilla custard:
2
dl
whipping cream
1
tbsp
sugar

tsp
vanilla sugar
Jam:
100
g
strawberry jam
Icing:
100

icing sugar

cocoa powder

Instructions
Prepare the shortcrust pastry:
Mix
200 g wheat flour
and
50 g icing sugar
in a bowl.
Add
100 g butter
in cubes and rub it into the flour mixture until it resembles coarse breadcrumbs.
Add
1 egg
and quickly bring the dough together. Shape it into a ball, wrap it in plastic wrap and place it in the fridge for 30 minutes.
Shape and bake the biscuits:
Roll out the shortcrust pastry on a lightly floured surface to about 3-4 mm thickness.
Cut out round biscuits with the cutter and place them on a piece of baking paper that fits your air fryer basket.
Preheat the air fryer to 180°C. (Use the preheat function, or let it run for a few minutes before cooking)
Bake the biscuits in the air fryer for about 8-10 minutes, or until lightly golden. Let them cool completely.
Make the cream vanilla custard:
Whip
2 dl whipping cream
until lightly whipped.
Add
1 tbsp sugar
and
1 tsp vanilla sugar
, and whip until the cream is stiff.
Assemble the Danish medaljer:
Take one biscuit and spread a layer of jam on it.
Pipe the cream vanilla custard on top of
100 g strawberry jam
.
Place another biscuit on top.
Stir together the icing from
100 g icing sugar
,
1 tbsp cocoa powder
and
2-3 tbsp water
. Adjust with water to get the right consistency.
Spread the icing on top of the biscuits.
Garnish with a dollop of
8 tbsp whipped cream
and
8 pcs Fresh strawberries
.
Notes
Make sure the biscuits are completely cool before assembling them, so the cream doesn't melt.
