Peel the 800 g potatoes and cut them into smaller pieces. Rinse them under cold water and boil them until tender in a pot of lightly salted water.
While the potatoes are boiling, sprinkle the 500 g pork belly slices with 1 tsp Salt and 1 tsp black pepper on both sides.
Prepare the pork
Preheat the air fryer to 200 ℃ for a couple of minutes.
Brush the air fryer basket with a little oil to prevent the pork from sticking.
Place the pork belly slices in the air fryer basket in a single layer.
Fry them in the air fryer for about 15-20 minutes, or until they are crispy and golden.Start the online kitchen timer here
Turn them halfway through frying to ensure even cooking.
Prepare the parsley sauce
While the pork is frying, prepare the parsley sauce. Melt 2 tbsp butter in a pot and add 2 tbsp plain flour. Stir well and let it cook for a minute to remove the raw taste of the flour.
Gradually add 3 dl milk while stirring constantly to avoid lumps.Let the sauce simmer and thicken until it reaches the desired consistency.
Add the finely chopped 1 bunch Fresh parsley to the sauce, and season with salt and pepper to taste.
When the potatoes are tender, drain them and serve together with the crispy fried pork and parsley sauce.
Notes
- Be careful not to overfill the air fryer, as this can affect the result of frying the pork belly in the air fryer.- Feel free to add other spices and herbs to the pork or potatoes to adjust the flavour to your preference.- Make sure to check the pork during frying to avoid it getting burnt.
