This recipe for lamb culotte cooked in the air fryer guarantees a tender and juicy result with a perfectly crisp exterior. Using the air fryer reduces the cooking time while giving you an even roast.
Preheat the air fryer to 180°C.(Pre-program it, or let it run for a couple of minutes before cooking)
Mix 2 tbsp olive oil, 2 clove garlic, 2 tsp fresh rosemary, 2 tsp fresh thyme, 1 tsp salt and pepper together in a small bowl.
Rub 1 pcs lamb culotte (approx. 800 g) with the spice mixture, so it is covered all over.
Place the lamb culotte in the air fryer basket. Make sure it does not touch the sides of the basket to ensure even cooking.
Cook the lamb culotte in the air fryer at 180°C for approx. 20-25 minutes for medium, depending on thickness. Start the online kitchen timer hereUse a kitchen thermometer to check that the internal temperature reaches 58-60°C for medium.
Take the lamb culotte out of the air fryer and let it rest for 10 minutes before carving. This ensures that the juices distribute evenly.
