Mix 30 g raisins, 20 g dried cranberries, 10 g chopped candied peel, grated 1 pcs apple, 20 g soft brown sugar, 1 tsp ground cinnamon, ½ tsp ground ginger, ½ tsp ground cloves, 1 tbsp orange juice and 1 tsp grated orange zest in a bowl.

Make the pastry:
Rub 50 g cold butter, diced into 100 g wheat flour until it resembles breadcrumbs.
Add 1 tbsp sugar and 1-2 tbsp cold water a little at a time, until the dough comes together.

Assembly and baking:
Roll out the pastry on a floured surface and cut out 4 large circles (approx. 8 cm) and 4 smaller circles (for the lids).
Place the large circles in the moulds, fill each with about 1 tbsp mincemeat and top with a lid.
Press the edges together and make a small slit in the top.
Brush with 1 pcs egg.
Baking in the airfryer:
Preheat the airfryer to 180°C.(Pre-program it, or let it run for a couple of minutes before cooking)
Bake the mince pies for 10-12 minutes, until golden and crisp.Start the online kitchen timer here
Let them cool, then dust with 1 tbsp icing sugar before serving.

Serve with whipped cream, crème fraîche or vanilla custard.
