A moist, fluffy pear cake with fresh pears, cardamom and a crunchy scattering of flaked almonds. Baked in about 30 minutes in the air fryer – no need to switch on the big oven.

Cake batter

150gplain flour
1.5tspbaking powder

Peel 3 pears and remove the cores. Cut two of the pears into wedges about 0.5 cm thick and the last pear into cubes about 1 cm.
Toss all the pear pieces in 1 tbsp lemon juice so they don't brown.
Melt 100 g butter in a small saucepan and let it cool while you make the batter.
Line the base and sides of an 18 cm springform tin with baking paper.
Cake batter
Whisk 2 eggs and 125 g sugar pale and fluffy with an electric whisk for about 3 minutes.
Sift together 150 g plain flour, 1.5 tsp baking powder, 1 tsp vanilla sugar, 0.5 tsp ground cardamom and 1 pinch of salt, and fold it gently into the egg mixture.
Stir 0.5 dl milk and the cooled melted butter into the batter until smooth and even.
Fold the pear cubes into the batter and pour the batter into the tin. Arrange the pear wedges in a pattern on top and press them gently into the batter.
Sprinkle 25 g flaked almonds and 1 tbsp soft brown sugar evenly over the cake.
Baking in the air fryer
Place the tin in the preheated air fryer and bake the pear cake at 160°C for 28-32 minutes.
Check the cake after 25 minutes with a toothpick in the middle. It should come out clean, otherwise give the cake another 3-5 minutes. (Check a couple of times along the way.)
If the flaked almonds get too dark, loosely place a piece of baking paper over the cake for the last 10 minutes.
Serving
Let the pear cake cool in the tin for 10 minutes before loosening the edge and taking it out.
Serve the cake warm or cold with whipped cream, crème fraîche or a scoop of vanilla ice cream.
Notes
Tips for the perfect result:
Use firm, ripe pears. Very soft pears release too much juice and make the bottom of the cake soggy. The air fryer bakes most intensely from the top, so keep an eye on the cake for the last few minutes and loosely cover it if needed.The tin:
Use an 18 cm springform tin that can stand freely in the basket with at least 2 cm of air all the way round. A smaller tin makes the cake taller and needs 5-8 minutes extra baking time.Variation:
Swap the cardamom for cinnamon, or add the grated zest of ½ an organic lemon for a fresher touch. Chopped dark chocolate in the batter makes the cake extra festive.Serving:

If your air fryer is smaller, you can bake the batter in two smaller tins in two batches for the best result.
