Crispy cocktail sausages straight from the air fryer, with a golden, crackling skin and a juicy centre. This little Christmas-table classic is ready in a quarter of an hour and comes with a tangy honey mustard dip.

600gcocktail sausages

Preparation
Pat the 600 g cocktail sausages dry with kitchen paper. A dry surface is the difference between crispy and tough skin.
Brush the sausages lightly with 1 tbsp rapeseed oil, so they brown evenly and get a golden crust all the way round.
Cooking in the air fryer
Preheat the air fryer to 200 °C.
Place the cocktail sausages in a single layer in the basket with air around each sausage. If they're stacked on top of each other, they'll steam instead of crisping up.
Cook the sausages for 8-10 minutes at 200 °C, until the skin is glossy, golden and crispy.
Shake the basket after about 5 minutes, so the sausages turn and brown evenly on all sides.
Serving
Stir the 4 tbsp wholegrain mustard together with the 1 tsp honey in a small bowl to make a sweet-and-tangy dip.
Serve the cocktail sausages hot, straight from the basket, with the honey mustard on the side. They taste best right away, while the skin is still crackling.
Notes
Tips for the perfect result:
Never prick holes in the cocktail sausages. The skin needs to hold in the juices, and a hole will dry them out. For extra crispy sausages, give them two minutes more at 200 °C and keep an eye on them towards the end.Variation:
Wrap each sausage in a strip of bacon before cooking, or toss them in a little sweet paprika and garlic powder for a spiced version.Serving:
