A delicious and juicy rack of lamb cooked in the air fryer, giving a crispy surface and a tender inside. Perfect for a festive occasion or a cosy dinner.
Clean 1 pcs rack of lamb (approx. 800 g) and trim off any excess fat.Pat the meat dry with kitchen paper.
Mix 2 tbsp olive oil, 2 clove garlic, 1 tsp rosemary, 1 tsp thyme, 1 tsp salt and freshly ground black pepper in a small bowl. Rub the mixture thoroughly into the rack of lamb.
Place the rack of lamb in the air fryer basket with the fat side up.
Cook in the air fryer at 180°C for approx. 20-25 minutes for medium-rare, or until a meat thermometer inserted into the thickest part of the meat reads 58°C.Start the online kitchen timer here
Take the rack of lamb out of the air fryer and let it rest for 10 minutes before carving.
