A moist and delicious rhubarb cake that's easy to make in an air fryer. Perfect for spring and summer when rhubarb is in season. This cake is soft and spongy with a delightful tartness from the rhubarb, and it doesn't take much time or effort.

1 Whisk or an electric mixer
1 Baking pan that fits in the air fryer (about 18-20 cm in diameter)
Rinse the 200 g rhubarb thoroughly and cut into small pieces. Mix with 50 g150 g sugar and leave to sit for about 10 minutes.
Make the cake batter:
In a large bowl, whisk the softened 100 g butter and the remaining sugar (100 g) together until light and creamy. Add the 2 pcs eggs one at a time, whisking well after each egg.
Dry ingredients:
Mix the 200 g plain flour, 1 tsp baking powder and 1 tsp vanilla sugar in a separate bowl.
Combine the batter:
Add the dry ingredients alternately with the 1 dl milk to the butter mixture, and stir until the batter is smooth and free of lumps.
Add the rhubarb:
Gently fold the macerated rhubarb pieces into the batter.
Prepare the baking tin:
Grease the baking tin or line it with baking paper. Pour the batter into the tin and smooth out the surface.
Baking:
Preheat the air fryer to 160°C.(Preheat function, or let it run for a couple of minutes before cooking)Place the baking tin in the air fryer and bake the cake for about 30-35 minutes, or until a skewer comes out clean when inserted into the centre of the cake.Start the online kitchen timer here
Cooling:
Let the cake cool in the tin for about 10 minutes before removing it from the tin and letting it cool completely on a wire rack.
Notes
You can add a sprinkle of icing sugar on top of the cake before serving for extra decoration and sweetness.
