These skyr buns are a healthy and delicious twist on traditional buns, with a moist crumb and a lightly crisp crust thanks to the rolled oats on top.

Ingredients
250gwheat flour
1dlskyr
125mlwater
1tspsalt
1tbspsugar
25gyeast
50grolled oats

Instructions
Dissolve 25 g yeast in the lukewarm 125 ml water in a large bowl. Add 1 dl skyr, 1 tbsp sugar, and 1 tsp salt and stir well.
Add 250 g wheat flour and 50 g rolled oats a little at a time while you knead the dough, until it is smooth and elastic.This takes about 10 minutes.
Cover the bowl with a damp cloth and let the dough rise in a warm place for about 1 hour, or until it has roughly doubled in size.
Divide the dough into 6 equal pieces and shape them into buns. Lightly brush each bun with 1 tbsp olive oil and sprinkle some rolled oats on top to decorate.
Preheat the air fryer to 180°C.(Preset it, or let it run for a couple of minutes before cooking)Place the buns in the air fryer basket, making sure there is space between them for even cooking.
Air fry the buns at 180°C for about 15-20 minutes, or until they are golden and baked through.Start the online kitchen timer here
