Light, fluffy muffins with juicy pieces of fresh strawberry. A simple cake that bakes easily in the air fryer and is ready for coffee time in under half an hour.

Rinse the 200 g fresh strawberries and cut them into small cubes. Toss them with a tablespoon of flour so they stay suspended in the batter.
Mix 250 g plain flour, 2 tsp baking powder, 150 g sugar, 1 tsp vanilla sugar and 1 pinch salt in a mixing bowl.
Whisk 2 pcs eggs, 150 ml milk and 75 g butter together in another bowl.
Pour the wet mixture into the dry ingredients and stir gently until the batter has just come together. Avoid stirring too much, or the muffins will turn out tough.
Gently fold the flour-dusted strawberries into the batter.
Divide the batter between muffin cases until they are about three-quarters full.
Cooking in the air fryer
Place the muffin cases in the air fryer basket with a little space between them and bake at 160 °C for 15 minutes, until the muffins are golden and a toothpick comes out clean. Bake in several batches if they don't fit in a single layer.
Let the muffins cool on a wire rack for a couple of minutes before serving.

Tips for a perfect result:
Stir the batter only until it just comes together — overmixing makes the muffins tough. Toss the strawberries in a little flour so they don't sink to the bottom while baking.Variation:
Swap the strawberries for raspberries, blueberries or a mix of strawberries and white chocolate. A touch of grated lemon zest lifts the flavour.Serving:
