Instructions
Preparation
Stir 50 g breadcrumbs together with 1 dl whole milk in a mixing bowl, and leave the mixture to stand for 10 minutes, until the breadcrumbs have soaked up all the liquid.
Finely chop 1 pcs onion, so it melts into the mixture without adding any bite.
Add 300 g ground beef, 300 g ground pork, 1 pcs egg, the chopped onion, 1 tsp salt, 0.5 tsp black pepper and 0.5 tsp allspice to the soaked breadcrumbs. Knead the mixture thoroughly for 3-4 minutes, until it is firm and holds together.
Shape the mixture into 24 small, firm meatballs about the size of a walnut. Dampen your hands with cold water as you go, so the mixture doesn't stick to your fingers.
Cooking in the airfryer
Preheat the airfryer to 180°C.
Brush the meatballs with 1 tbsp rapeseed oil, and place them in the basket in a single layer with a little space between them. Cook them in two batches if they don't all fit at once.
Cook the meatballs at 180°C for 12 minutes, shaking the basket after 6 minutes so they turn golden all over. They are done at a core temperature of 70°C.
Brown gravy
Melt 30 g butter in a saucepan over medium heat while the meatballs cook in the airfryer. Stir in 30 g plain flour, and let the roux bubble for 1 minute, stirring.
Gradually whisk in 5 dl beef stock a little at a time, whisking vigorously so the gravy becomes completely smooth. Let it simmer for 5 minutes, until thick and glossy.
Stir 1 dl double cream and 1 tsp dark soy sauce into the gravy, and season to taste with 1 tsp salt and pepper.
To serve
Serve the hot meatballs with the brown gravy, 800 g mashed potatoes and 4 tbsp lingonberry jam on the side.
Notes
Tips for the perfect result:
Let the mixture rest in the fridge for 10 minutes before shaping the meatballs — it will firm up and hold its shape better in the circulating hot air. Roll the meatballs uniformly small so they finish cooking at the same time, and keep them in a single layer with space in between.Variation:
Swap the allspice for grated nutmeg for a milder flavour, or stir a tablespoon of finely chopped dill into the mixture for a fresher version.Serving:
