Enjoy a healthy and colourful side dish with root vegetables, perfectly cooked in an air fryer. This recipe gives the root vegetables a lovely crispy surface and a sweet, caramelised flavour without using much oil
Preheat the air fryer to 200°C. (Pre-program it, or let it run for a couple of minutes before cooking)
In a large bowl, mix the vegetables cut into sticks: 2 pcs carrot, 2 pcs parsnip, 1 pcs sweet potato, 1 pcs beetrootWith 2 tbsp olive oil, 1 tsp sea salt, ½ tsp black pepper and 1 tsp dried rosemary, until they are evenly coated.
Spread the root vegetables out in the air fryer basket. Make sure they don't lie on top of each other for the best result.
Cook in the air fryer for about 20-25 minutes, or until the root vegetables are golden and crisp. Shake the basket or turn the root vegetables halfway through cooking for even browning.Start the online kitchen timer here
