1 Hand mixer or stand mixer

Ingredients
1literice cream of your choice
4pcsegg whitespasteurised
200gsugar
1tspvanilla extract
1pcsstore-bought or homemade cake baseadjusted to the size of your tin
Preheat the air fryer to 200°C.(Preprogram it, or let it run for a couple of minutes before cooking)
Place the cake base in the bottom of the cake tin.
Cut the ice cream so it fits over the cake base, and press it down so the surface is even. Freeze until firm.
Whisk the egg whites with a hand mixer or stand mixer until soft peaks form. Add the sugar gradually and keep whisking until the meringue is glossy and stiff. Add the vanilla extract.
Spread the meringue over the ice cream, making sure to cover it completely, including along the edges.
Place the cake tin in the air fryer and bake for about 4-5 minutes, or until the meringue is golden.Start the online kitchen timer here
