These fluffy and moist blueberry muffins are a treat you can enjoy on any occasion. The quick cooking in the air fryer makes them a perfect choice when you fancy something sweet in a hurry.
Preheat your air fryer to 180 degrees.(Use a preset, or let it run for a couple of minutes before cooking)
In a bowl, sift together 4 dl plain flour, 1 dl sugar, 1 tsp baking powder and ½ tsp salt.
In another bowl, lightly whisk 1 pcs egg, then add 1 dl milk, ½ dl melted butter and 1 tsp vanilla extract.Mix everything together well.
Add the wet ingredients to the dry ones and stir gently until just combined. Be careful not to overmix, as this can result in tough muffins.
Gently fold the 2 ½ dl fresh blueberries into the batter.
Distribute the batter into muffin cases placed in silicone muffin pans. (Without overfilling the cases)
Bake the muffins in the air fryer for 10-12 minutes, or until golden and baked through. Remember to rotate the pans halfway through for even baking.Start the online kitchen timer here
Let the muffins cool for a few minutes before serving. Enjoy them warm or at room temperature.
Notes
You can replace the blueberries with other berries or fruit to taste.
