A brookie is a delicious combination of a brownie and a cookie, baked to perfection in an airfryer. This recipe gives a crisp surface with a soft and moist centre, perfect for a quick dessert or snack.
Start by preparing the cookie dough:Beat 100 g butter and 100 g sugar together until light and fluffy.Add 1 pcs egg and 1 tsp vanilla extract, and mix well. Add 150 g plain flour, 1 tsp baking powder and 1/4 tsp salt, and stir until the dough is smooth. Finally, fold in 100 g chocolate chips.
Prepare the brownie dough:Melt 100 g dark chocolate and 50 g butter together over low heat or in the microwave. Stir in 75 g sugar and 1 pcs egg until the mixture is smooth. Add 50 g plain flour and 1/4 tsp baking powder, and stir until the mixture is even.
Line the airfryer basket with baking paper or place the silicone mould in the basket. First add a layer of cookie dough in the bottom, then a layer of brownie dough on top.

Notes
If you'd like a moister brookie, reduce the baking time by a couple of minutes.
