An easy and delicious fried rice recipe made in the air fryer. This recipe is perfect for a quick dinner and can be customised with your favourite vegetables and proteins.

Ingredients

dl
cooked rice
preferably cold
2
dl
Fresh vegetables
peas, carrots, corn

eggs

soy sauce

sesame oil

tbsp
sunflower oil

garlic
chopped

onion
chopped

chicken breast

finely chopped for garnish

Instructions
Preparing the ingredients:
Cook rice so you have
5 dl cooked rice
and let it cool completely, preferably overnight.
Chop
1 pcs onion
and
2 clove garlic
, and cut
200 g chicken breast
or tofu into cubes.
Prepare
2 dl Fresh vegetables
.
Cooking the chicken
Heat
1 tbsp sunflower oil
in a pan over medium heat.
Add the chicken and
1 tsp salt and pepper
and fry until golden brown.
Set aside.
Preparing the rice:
Preheat the air fryer to 200°C.
(Preprogram it, or let it run for a couple of minutes before cooking.)
In a large bowl, mix the cold rice with
1 tbsp sesame oil
and
2 tbsp soy sauce
.
Add the mixed vegetables, chicken or tofu, garlic, and onion. Stir well.
Frying in the air fryer:
Place the rice mixture in the air fryer in an even layer.
Air fry for 10-15 minutes, stirring halfway through the cooking time to ensure the rice becomes evenly crispy.

Eggs:
Whisk
2 pcs eggs
together and fry them in a pan until set. Cut them into small pieces and mix them into the finished fried rice.
Serving:
Serve the finished fried rice on plates and garnish with
1 tbsp spring onions
.
