A moist and spiced pumpkin cake that's easy to make in the air fryer. Perfect as an autumn treat with a hint of warm spices and a delicious cream cheese frosting on top.

Ingredients
Pumpkin Cake:
200gpumpkin purée
100gsoft brown sugar
2pcseggs
100mlolive oil
150gplain flour
1tspbaking powder
1tspcinnamon
½tspground ginger
½tspground nutmeg
½tspsalt
Cream Cheese Frosting:
100gcream cheese
50gbutter
100gicing sugar
½tspvanilla extract
Makes: 16cm0 x 0cm round, 5cm height
Instructions
Pumpkin Purée
Wash and cut the pumpkin (e.g. 1 Hokkaido or Butternut Squash) in half, and remove the seeds with a spoon.
Cut the pumpkin into smaller pieces, and place them cut-side down in your air fryer drawer
Bake the pumpkin for 30 minutes, or until the pieces are completely tender.Test with a fork – it should easily go through.
Let the pumpkin pieces cool, then scrape the soft flesh out of the skins.
Blend the pumpkin flesh with a stick blender or in a food processor, until the purée is smooth and even.
Cake:
In a bowl, whisk 2 pcs eggs and 100 g soft brown sugar, until the mixture is light and foamy.
Add 200 g pumpkin purée and 100 ml olive oil (or melted butter), and stir well together.
In another bowl, sift 150 g plain flour, 1 tsp baking powder, 1 tsp cinnamon, ½ tsp ground ginger, ½ tsp ground nutmeg and ½ tsp salt.
Fold the dry ingredients into the wet, until the batter is smooth and combined.
Pour the batter into a silicone mould, and place the mould in the air fryer.
Bake the cake in the air fryer for 20-25 minutes at 160°C, or until a toothpick comes out clean.
Let the cake cool for 10 minutes, before cutting it into 8 pieces.
Cream Cheese Frosting:
Whisk 100 g cream cheese and 50 g butter (softened) together, until the mixture is smooth and fluffy.
Add 100 g icing sugar and ½ tsp vanilla extract, and whisk until the frosting is smooth and even.
Spread the cream cheese frosting over the cooled cake, or serve it on the side, so everyone can add as much as they like.
Notes
- Add chopped nuts or chocolate to the cake for extra flavour, if you like.
- Best served warm with cream cheese frosting or vanilla ice cream on the side.
