Why Make Pumpkin Cake in the Air Fryer?
There are several reasons to choose the air fryer when baking a pumpkin cake. First and foremost, the air fryer lets you prepare the cake faster than a traditional oven. The benefits of using an air fryer for baking include:
- Faster Cooking Time: An air fryer reaches its temperature far quicker than a conventional oven, which saves time.
- Excellent Texture: Thanks to the even heat distribution in an air fryer, you get a lovely texture in the cake, crisp on the outside and moist on the inside.
Pumpkin cake is particularly well suited to the air fryer, as it retains moisture even when baked at a high temperature. This means you get a cake that’s light and delicious, yet still has a good firmness that makes it easy to slice and serve.

Where Does Pumpkin Cake Come From?
Pumpkin cake has its roots in American tradition, where pumpkin has been an important ingredient for several centuries. When the Pilgrims arrived in America, they were introduced to pumpkin by the native peoples, and the versatile fruit quickly became a staple of their diet. Today, pumpkin is closely associated with autumn and is often used in baking, especially around Thanksgiving.
In Denmark, pumpkin cake has become popular in recent years, especially around Halloween and autumn’s focus on seasonal produce. Here in Denmark, we’re lucky to have access to fresh pumpkins during the autumn months, and by using Danish-grown pumpkins we can achieve an even more authentic and sustainable cake experience. The most popular types of pumpkin for baking in Denmark include:
- Hokkaido: A small, firm pumpkin variety with a natural sweetness and a slightly nutty flavour. Hokkaido can be baked with the skin on, which makes it easy to prepare.
- Butternut Squash: Has a creamy texture and mild flavour, making it ideal for both pumpkin soup and baking.
- Musk Pumpkin: This type of pumpkin is a little larger and has a more intense flavour. It’s also particularly well suited to pumpkin cake.
Can You Give the Cake a Twist?
A pumpkin cake can be varied in many ways, so you can create your own signature version. Here are some ideas for giving the cake a twist:
- Spices: Classic spices such as cinnamon, ginger and nutmeg are almost unavoidable in a pumpkin cake. But you can also add cardamom or star anise for an extra aromatic experience.
- Nuts: Add chopped walnuts, pecans or hazelnuts for a crunchy texture. This adds both flavour and a bit of extra bite to the cake.
- Chocolate: Dark chocolate pairs surprisingly well with pumpkin, as its bitterness balances the sweetness. Try adding roughly chopped chocolate to the batter, or melt chocolate and use it as a glaze.
- Fresh Fruit: Add dried fruit such as raisins, cranberries or chopped dates. This adds both sweetness and an extra rich texture.
- Cream Cheese Frosting: A cream cheese frosting with a hint of vanilla or lemon is a classic topping for pumpkin cake. Its soft, slightly tangy flavour is perfect with the spiced cake.
When experimenting with new ingredients, remember to adjust the recipe to your own taste. Try out different combinations, and find the variation that suits you and your guests best.
Try toasting your spices briefly in a dry pan before mixing them into the batter. Heating cinnamon, ginger and nutmeg releases their natural oils and flavours, giving the cake a deeper, more intense spice profile.

What to Serve with Pumpkin Cake from the Air Fryer?
Pumpkin cake is delicious on its own, but there are many ways to make serving it even more interesting. Here are some suggestions for how to serve your pumpkin cake:
- Cream Cheese Frosting: A classic topping that’s easy to make and adds a silky-smooth texture. Try seasoning the frosting with a little grated lemon zest or cinnamon.
- Vanilla Ice Cream: The cold ice cream and the warm cake create a perfect contrast that will impress most people. The ice cream melts slowly and complements the cake’s spiced flavour.
- Whipped Cream: A simple, light topping that gives the cake an extra treat. You can flavour the cream with vanilla sugar or a little grated nutmeg.
- Berry Compote: The freshness of tart berries like blueberries or raspberries pairs well with the sweet, spiced pumpkin cake. Make a quick berry compote and serve it on the side.
- Chopped Nuts: Use chopped walnuts or pecans as a garnish on top of the cake for extra texture and flavour.
Conclusion
Pumpkin cake from the air fryer is a lovely and easy way to enjoy the flavours of autumn. Using an air fryer gives you a quick preparation method that preserves the cake’s moistness and delivers a delicious, crisp crust. Inspired by the American baking tradition, pumpkin cake can be varied endlessly – from adding extra spices and nuts to serving it with cream cheese frosting or berry compote.
