The next one is impatience with the temperature: if you turn up the heat to get the cake done faster, the almond flakes burn long before the base is done, and bitter almond caramel can’t be saved. The third is cutting too soon — the cake needs its 50 minutes of cooling time, otherwise the topping falls apart instead of crunching.

Which apples are best for apple cake with almond topping?

Shortcrust base

  • 150 g plain flour

Apple compote

  • 500 g apples (Ideally tart ones, such as Ingrid Marie)
     
  • 40 g sugar
     
  • 1 tbsp lemon juice
     
  • 1 tsp cinnamon (Ground)
     
  • 2 tbsp water
     

Almond topping

  • 50 g butter
     
  • 60 g sugar
     
  • 2 tbsp double cream
     
  • 1 tbsp plain flour
     
  • 60 g flaked almonds
     

How to make it

Shortcrust base

  • Mix 150 g plain flour, 40 g sugar and 1 pinch salt in a mixing bowl. Rub in 100 g butter with your fingertips until the mixture resembles coarse breadcrumbs.
  • Add 1 pcs egg yolk and quickly bring the dough together. Knead just until it barely holds together — the less you work the dough, the more tender the base will be.
  • Line the base of an 18 cm springform tin with baking paper. Press the dough evenly into the base and about 2 cm up the sides.
  • Chill the tin for 30 minutes. The cold dough holds its shape and turns crisper during baking.

Apple compote

  • Peel 500 g apples, remove the cores and cut them into roughly 1 cm cubes. Toss them with 1 tbsp lemon juice so they don’t turn brown.
  • Put the apple cubes in a saucepan with 40 g sugar, 1 tsp cinnamon and 2 tbsp water. Cook the compote over medium heat for 8-10 minutes, stirring, until the apples are tender but still have some bite. Leave it to cool completely.

Almond topping

  • Melt 50 g butter in a clean saucepan. Stir in 60 g sugar, 2 tbsp double cream and 1 tbsp plain flour.
  • Bring the mixture to the boil, stirring, and let it simmer for 1-2 minutes until thick and lightly caramel-coloured. Fold in 60 g flaked almonds and take the saucepan off the heat.

Cooking in the air fryer

  • Preheat the air fryer to 170 °C fan.
  • Prick the base several times with a fork and bake it for 12 minutes at 170 °C, until the surface is dry and lightly golden.
  • Spread the cooled apple compote evenly over the base. Turn the air fryer down to 160 °C fan and bake the cake for a further 10 minutes.
  • Spread the almond topping evenly over the apples and bake the cake for 12-14 minutes at 160 °C, until the topping is crisp and golden brown. Loosely cover with a piece of baking paper for the last few minutes if the topping is browning too much.

Serving

  • Leave the cake to cool in the tin for at least 20 minutes, so the caramel sets, before you loosen the edge.
  • Cut the cake into pieces and serve it warm or cold with whipped cream, vanilla ice cream or a dollop of crème fraîche.

Tips for a perfect result:
Let the caramel for the almond topping simmer for a couple of minutes so it gets thick enough to set. If it’s too thin, it will run down into the apples instead of turning crisp on top.
Variation:
Swap the cinnamon for half a teaspoon of ground cardamom, or stir a handful of coarsely chopped walnuts into the almond topping.
To serve:
The cake is best served slightly warm, while the apples are still juicy and the topping is crunchy. Serve with whipped cream, vanilla ice cream or crème fraîche.
Portion size:
The springform tin needs to stand freely in the basket with air all the way round — measure up before you start. If your air fryer is small, use a 16 cm tin instead and extend the baking time by 3-5 minutes.
