The first time I myself came across this recipe was at my family’s home in Give. There we had it with lots of raisins on top. The Brunsviger has an interesting history that goes back to the 19th century in Denmark. Whether Hans Christian Andersen ate Brunsviger we don’t know for certain, as the first known recipe in Denmark comes from Madam Mangor’s cookbook, a classic Danish cookbook published in 1894 by the Danish author and housewife Valborg Mangor (also known as Valborg Hjorth). But it is likely that the Brunsviger was in Denmark during the last years of his lifetime.

Ingredients
For the dough:
- 250 g plain flour
- 50 g sugar
- 1 pinch salt

- 1 tsp dried yeast
- 1 pcs egg
- 50 g butter
- 1 dl milk
For the glaze:
- 100 g butter
- 200 g brown sugar
- 2 tbsp milk
- 100 g icing sugar
How to make it
- Mix 250 g plain flour, 50 g sugar and 1 tsp dried yeast (approx. 7g), 1 pinch salt in a mixing bowl.
- Heat 1 dl milk and 50 g butter in a small saucepan until the butter has melted. Let it cool slightly.
- Add the slightly cooled milk mixture and 1 pcs egg to the flour mixture. Knead the dough well until it is smooth and supple.
- Cover the dough and let it rise for about 30 minutes, until it has doubled in size.
- While the dough rises, prepare the glaze by melting 100 g butter in a saucepan and adding 200 g brown sugar. 100 g icing sugar and 2 tbsp milk.Let it boil for a couple of minutes until it thickens. Let it cool.
- Once the dough has risen, roll it out on a piece of baking paper so it fits your airfryer basket.
- Spread the cooled glaze evenly over the dough.
- Preheat your airfryer to 180 ℃
- Place the brunsviger in the airfryer basket and bake for 12-15 minutes or until it is golden brown and baked through.Start the online kitchen timer here
- Let the brunsviger cool on a wire rack before you cut it into portions and serve.
