Why make pecan pie in the air fryer?

Making pecan pie in an air fryer is all about achieving the perfect combination of texture and flavour. The dense heat distribution in the air fryer makes the base crisp, while the filling stays moist and caramelised. At the same time, it allows for smaller portions that are perfect for four people or as part of a dessert table.

The benefits of the air fryer in this context include:

I recommend this fresh sea buckthorn fruit drink with our pecan pie

The deep, nutty flavour of the pecan pie gets a fantastic counterpoint from the acidity and freshness of the sea buckthorn. I can warmly recommend Naturfrisk Sea Buckthorn fruit drink – a wonderful combination!

  • Precise control over the cooking
  • Faster baking time compared to conventional ovens
  • Perfect balance between a crisp base and a creamy filling

Pecan pie in the air fryer as a tradition

Pecan pie is deeply rooted in American traditions, where it is often served at Mayor holidays such as Thanksgiving and Christmas. With its sweet, rich flavour and decorative appearance, it is a popular dessert that brings cosiness and togetherness around the table.

In Denmark, pecan pie can also find its place as a Christmas cake that adds to the warm and cosy atmosphere. The rich flavour of the pecans and the tart’s caramelised filling pair perfectly with Danish Christmas traditions such as mulled wine and coffee.

Where does pecan pie in the air fryer come from?

The history of pecan pie can be traced back to the American South, where pecans were originally cultivated by Native Americans. As the nuts became more widely available, they began to find their way into desserts, and pecan pie became popular in the early 20th century. The recipe quickly became a favourite and is today an icon of American dessert culture.

The pecan, which has a sweeter and softer flavour than many other nuts, became a natural ingredient in sweet dishes. The combination of the nuts and the caramelised filling gives the tart its characteristic flavour.

What is the difference between pecans and walnuts?

Although pecans and walnuts resemble each other, they have distinct differences:

  • Flavour: Pecans have a sweeter and softer flavour, while walnuts are more bitter and robust.
  • Appearance: Pecans are elongated and smooth, while walnuts are more wrinkled and round.
  • Texture: Pecans are tender and buttery, while walnuts can be a little chewier and firmer.

Both types of nut are rich in healthy fats and vitamins, but pecans are often preferred in desserts for their sweeter flavour profile.

Alternative versions of pecan pie in the air fryer

For those who want to experiment, there are several ways to vary the pecan pie:

Chocolate pecan pie

Add a layer of melted dark chocolate beneath the filling for an intense and luxurious flavour. Chocolate and pecans complement each other perfectly and create a dessert that is ideal for chocolate lovers.

Salted caramel pecan pie

Replace some of the syrup with salted caramel and sprinkle with a little flaky salt after baking. This version gives a sophisticated contrast between the sweet and the salty.

Both variations can be adapted and made in smaller portions that are perfect for serving in the air fryer.

Try toasting the pecans lightly before use. By toasting the nuts for a few minutes in a dry pan or in the air fryer (about 3-4 minutes at 160 °C), their natural, nutty aroma is brought out, and it adds an extra depth of flavour to the tart’s filling. Make sure the nuts cool down before they are mixed into the filling, so they don’t affect the texture.

Our notes for the recipe

Tips for the shortcrust pastry:

Cold butter is important

Use ice-cold butter cut into cubes. Quickly rub it into the flour with your fingertips or a food processor until it resembles breadcrumbs. This ensures a crisp and flaky base.

Minimise handling

Knead the dough as little as possible after the water has been added. Just enough to bring it together. Overworked dough develops gluten, which makes the base tough instead of crisp.

Blind baking

The recipe recommends pre-baking the base. This is a crucial step to prevent a soft and soggy base under the wet filling. Prick the base with a fork before blind baking.

Tips for the filling:

Toast the nuts

For a deeper and more intense nutty flavour, you can lightly toast the pecans in your air fryer (3-4 minutes at 160 °C) or in a dry pan. Let them cool completely before adding them to the filling.

Avoid overbeating

When you mix the filling, it should only be stirred together until it is uniform. If you beat too much air into the eggs, the filling can become too soufflé-like and crack.

Quality ingredients

The flavour of a pecan pie is quite simple and depends heavily on the quality of your ingredients. Use a good golden syrup and fresh pecans for the best result.

Variations:

Chocolate Pecan

Add a handful of dark chocolate chips to the base of the pie before pouring over the filling, for a “Derby Pie” variant.

A touch of spirits

A tablespoon of bourbon, dark rum or cognac in the filling complements the caramel and nutty flavour really well.

Spices

A small pinch of cinnamon or cardamom in the filling can give a lovely spiced warmth that suits autumn and winter.

Air fryer-specific tips:

Find the right tin

The biggest challenge is having a tart tin that fits down into your air fryer basket. Measure your basket before you start. Small, individual tart tins are also an excellent option.

Watch the top!

Pecans and sugary filling can easily get too dark in the air fryer’s intense, direct heat before the filling has set. Keep a close eye on the pie. If the top gets too dark too quickly, you can cover it loosely with a piece of foil for the last 5-10 minutes of the baking time.

Check if it’s done

The pie is done when the edges are firm and the centre still has a slight “wobble” when you gently shake the tin. It will set completely as it cools.
