Autumn in Denmark is something truly special. The leaves change color, the air turns cooler, and the apple trees are heavy with fresh, crisp apples. This time of year, I love experimenting in the kitchen with seasonal produce. One of my favorites is apple scones in the air fryer. They’re quick to make, packed with flavor, and the perfect combination of crispiness and softness. Scones are a classic British baked good, but with a Danish twist — adding our own apples — they become a truly special treat. Let me share my experience, ingredients, and tips, so you too can enjoy these delicious treats.

Essential Ingredients for Apple Scones in the Air Fryer

Flour and Leavening Agents

The foundation of a good scone is, of course, the flour and leavening agents. I prefer using a combination of wheat flour and baking powder to achieve the right lightness. The wheat flour gives a lovely structure, while the baking powder ensures the scones rise nicely during baking in the air fryer. It’s important to sift the flour to avoid lumps and ensure an even dough. Sometimes I also add a little baking soda and an acidic ingredient like buttermilk or yogurt to give the scones extra lightness and a slightly tangy flavor. The choice of flour can also vary:

  • Whole wheat flour: Adds fiber and a nutty flavor.
  • Spelt flour: Gives a rustic texture and is easy to digest.
  • Gluten-free flour blend: A good alternative for those with gluten intolerance.

Fresh Apples and Other Fruits

The apples are the star of this recipe. I recommend using Danish apples such as Ingrid Marie, Cox Orange, or Belle de Boskoop, as they have a good balance of sweetness and tartness. Cut them into small cubes or grate them coarsely, depending on which texture you prefer in your scones. If you want to experiment, you can also add other fruits for variation:

I recommend this refreshing ColdBrew tea with our apple scones

If you want to try something both fresh and delicious with your scones, a ColdBrew tea is a hit. I can highly recommend Muma Blueberry Apple ColdBrew Tea – the combination of blueberry and apple is absolutely perfect with this baked treat.

  • Pears: Add a mild sweetness.
  • Plums: Give a slightly tart flavor.
  • Dried fruits: Raisins or cranberries for extra sweetness.

Combining apples with spices like cinnamon, cardamom, or nutmeg can also lift the flavor to new heights. Remember to choose fresh, ripe fruit for the best taste and texture.

Quality Ingredients for Baking Apple Scones in the Air Fryer

Choosing the Right Flour and Sugar

The quality of your ingredients makes a big difference to the final result. Organic wheat flour isn’t just better for the environment — it also gives a more natural flavor and better nutritional value. If you want to add extra depth to your scones, you can experiment with mixing different types of flour, such as whole wheat, graham, or spelt flour. These flour types add an interesting texture and flavor that complements the apples.

When it comes to sugar, I prefer:

  • Cane sugar: Adds a deeper sweetness.
  • Brown sugar: Gives a slightly caramelized flavor.
  • Honey or maple syrup: Natural sweeteners with unique flavor nuances.

These sugars contain molasses, which gives a richer flavor than regular white sugar. It’s also important to use quality fat. Butter gives a rich flavor and good texture to the scones. Choose high-quality unsalted butter so you can control the salt content in the dough yourself. Alternatives can include:

  • Plant-based margarine: For a lighter version.
  • Coconut oil: Adds a subtle coconut flavor.

Finally, dairy products are worth considering. Buttermilk, yogurt, or sour cream can add moisture and a slight tanginess to the scones, which complements the sweetness of the apples. Choose organic products for the best taste and quality.

Tips and Tricks for Perfect Apple Scones in the Air Fryer

Handling and Incorporating Apples

One of the keys to successful apple scones in the air fryer is how you handle the apples. To prevent them from releasing too much juice and making the dough wet, you can:

  • Sprinkle the apple cubes with flour or cinnamon: Helps absorb moisture and adds flavor.
  • Work quickly with the dough: To preserve its lightness.
  • Weigh out the amount of apples: To avoid a heavy dough.

If you want extra texture, you can add chopped nuts such as:

  • Walnuts
  • Almonds
  • Hazelnuts

This gives a lovely crunchy contrast to the soft apple pieces.

Baking Techniques and Temperature Control

Baking scones in the air fryer requires a bit of adjustment. To achieve the best result:

  • Preheat the air fryer to around 160°C: Ensures even baking.
  • Place the scones with enough space between them: So the air can circulate around them.
  • Keep an eye on the baking time: After 10-12 minutes, they should be golden and firm.

For an extra glossy surface on your apple scones in the air fryer, you can:

  • Brush with milk or egg before baking

Also remember to:

  • Rotate the tray halfway through: For even heat distribution.
  • Let the scones cool slightly: They taste best when still a little warm.

Try using frozen butter and grating it directly into the flour. Grating cold butter into the dry ingredients gives your scones a lighter, flakier texture. This is because the small pieces of butter melt during baking and create air pockets in the dough.
