The history of Brunkager

Traditional roots

Brunkager have a long tradition in Denmark. Originally, they were baked as part of the Christmas preparations, with the whole family taking part in the process. Back then, spices such as cinnamon, cloves and ginger were precious goods imported from distant lands. Using them in baking was a sign of prosperity and festivity.

I remember how my grandmother told stories about how her great-grandparents baked Brunkager in large quantities for the whole village. It was not only a family activity, but also a way of strengthening the community. Recipes were handed down through the generations, often with small personal tweaks that made every family’s Brunkager unique.

Today, the tradition lives on. Although the world has changed a great deal, the essence of baking Brunkager in the air fryer remains the same. It is about coming together, sharing experiences and creating memories. Every time Danes bake them, they connect with the past and keep an important part of their cultural heritage alive.

Spices and flavour nuances

One of the secrets behind the irresistible taste of Brunkager is the aromatic spices. Cinnamon, cloves and ginger play the leading roles and give the cookies their characteristic warm, spicy flavour. These spices not only create a fantastic taste experience, but also fill the home with an aroma that captures the essence of Christmas.

When I bake, I prefer to use Danish ingredients where possible. Locally produced butter and syrup from Danish farms add an authentic flavour and at the same time support local producers. It feels good to know that the ingredients have not travelled far and that they have been produced with care and respect for nature.

Some people also add chopped almonds or pistachios for extra texture. It is a lovely way of giving the cookies a personal touch. Every family has its own secret ingredient or method, which makes Brunkager even more special.

How to make Brunkager in the air fryer

The preparation process

Making Brunkager is a process full of hygge and anticipation. It starts with gathering all the ingredients and enjoying the scent of the different spices. I begin by mixing butter, sugar and syrup until it forms a smooth mixture. Then I add the dry ingredients such as flour, spices and any nuts.

An important part of the process is letting the dough rest. I shape it into a ball, wrap it in cling film and put it in the fridge for at least 30 minutes. This gives the spices time to develop their flavour and makes the dough easier to work with. Then I roll the dough out to a thickness of about 3 mm and cut out the cookies with a cookie cutter. It takes a little patience, but it is all worth it when you taste the final result.

Try letting the dough mature in the fridge for several days – ideally up to 3 days. By letting the dough rest for longer, the spices develop a deeper and more complex flavour, which gives the Brunkager an extra dimension of aroma

Baking and serving

When the dough is ready, I place the cut-out cookies on a piece of parchment paper that fits in the air fryer basket. The air fryer is preheated to 160 °C, and the cookies bake for 5-7 minutes, until golden. While they bake, a fantastic scent spreads through the whole house. It is a scent that immediately brings to mind cosy moments and the Christmas Eves to come.

After baking, I let the Brunkager cool on a wire rack before putting them in an airtight container. They stay crisp and delicious for up to 2 weeks, if they are not eaten first, that is! I love serving them with a cup of warm gløgg (Danish mulled wine) or tea when friends and family drop by. It is a simple but heartwarming way of sharing the joys of Christmas.

Brunkager in Danish culture

Brunkager in the air fryer are more than just delicious Christmas cookies; they are a deeply rooted part of Danish culture and Christmas traditions. They represent hygge, community and the values Danes hold dear at Christmas time. Baking Brunkager together is a tradition that brings generations together and creates lasting memories.

In many Danish homes, baking Brunkager with the children is a firm tradition. It is a fantastic way of introducing the little ones to Denmark’s culinary heritage and helping them understand the importance of traditions. At the same time, it is a fun activity where creativity can run free with different cookie cutters and decorations.

Brunkager also find their way to Christmas markets and shops all over the country. They are a staple of Danish Christmas treats and a symbol of the Danish love of traditional baking. Giving Brunkager as a gift is a gesture that shows thoughtfulness and wishes for a merry Christmas.

FAQ

What temperature and time do Brunkager need in the air fryer?

I bake the Brunkager at 160 °C for 5-7 minutes, until golden. Keep a close eye on them for the last few minutes, because the thin cookies take on colour quickly and air fryers vary a little. Let them cool on a wire rack – they only become properly crisp once they are cold.

Can the dough be made in advance?

Yes, you can easily make the dough in advance. Wrap it well in cling film and it will keep for up to 3 days in the fridge, and the spices have time to develop even more flavour. When you are ready, simply roll it out to about 3 mm and cut out the cookies.

How do you store Brunkager?

Once the Brunkager are completely cool, put them in an airtight tin at room temperature. They will then stay crisp for up to 2 weeks. If they go into the tin while still warm, you risk them turning soft.
