What is the story behind mock hare?
I grew up with this dish myself in the 80s. Typically, when my mom was a bit busy, she would quickly throw this meatloaf in the oven in slightly different versions. Another classic from back then is frikadeller (Danish meatballs) in the air fryer, which I also love to make.
The earliest known reference to a dish resembling mock hare comes from a Danish cookbook from 1796: ‘Den Danske Kogebog’ (The Danish Cookbook) by Anne Margrethe Mangor (1796).
This cookbook describes a dish called ‘Fyldt Hare’ (Stuffed Hare), consisting of a filling of beef, pork and bacon rolled up and roasted.
Meatloaf was a popular dish in Denmark in the 19th century. It was a cheap and easy way to prepare meat, and a good way to use up leftover meat. Meatloaf was often served with gravy, potatoes and vegetables.

Ingredients
- 500 g minced veal and pork
- 1 pcs onion
- 2 clove garlic
- 1 pcs egg
- 1 dl milk
- 1 dl breadcrumbs
- 1 tbsp Dijon mustard
- 1 tbsp fresh thyme
- 1 pinch salt and pepper
- 4 slices bacon

How to make it
- In a large bowl, mix 500 g minced veal and pork with 1 pcs onion, 2 clove garlic, crushed, 1 pcs egg, 1 dl milk, 1 dl breadcrumbs, 1 tbsp Dijon mustard, chopped 1 tbsp fresh thyme, 1 pinch salt and pepper. Knead the mixture together well, until all the ingredients are well combined.
- Shape the meat mixture into an elongated hare shape on a baking tray or a piece of baking paper. Place 4 slices bacon on top of the meat mixture, and press them down lightly to make sure they stay in place during cooking.
- Place the hare shape in the airfryer basket and cook for 25-30 minutes at 180℃, or until the meat mixture is cooked through and the bacon is crisp and golden.Start the online kitchen timer here
- When the meatloaf is done, carefully remove it from the airfryer. Let it rest for a few minutes before you slice it and serve.
