Baked chicken parmesan with sweet potato mash – crispy, creamy and full of comfort
There’s just something special about coming home on a cool autumn or winter evening knowing that dinner will be both delicious and cosy. This dish – baked chicken parmesan with sweet potato mash – has lately been one of my absolute favourites. It’s the kind of combination where the crispiness of the chicken meets the soft, sweet mash, and the whole thing turns into pure comfort food.
The chicken breasts are breaded in a mixture of breadcrumbs and grated parmesan, seasoned with herbs like oregano and basil. They’re then baked to perfection in an air fryer to achieve a crispy, golden parmesan crust.
I recommend this elegant Italian white wine with our baked chicken parmesan
Soave is a classic Italian white wine with a fresh, mineral character that pairs perfectly with chicken. It has lovely notes of citrus and almonds that beautifully complement the parmesan and the sweet potato mash. I warmly recommend the Latium Morini Le Calle Soave 2023 – it brings the Italian mood right into your kitchen.
The parmesan cheese and sweet potato mash make the difference
Parmesan’s popularity as a topping on dishes can be attributed to its strong umami flavour. It can enhance and intensify the taste of a wide range of dishes, from pasta and risotto to soups and to this dish here. Umami, the fifth basic taste, describes a deep and lasting flavour that is universally satisfying and amplifies the taste of the other ingredients in a dish.
If you’d like a more kid-friendly version of the dish, you can use mozzarella cheese and tomato salsa as a filling.

Side dishes for chicken parmesan in the air fryer
As a contrast, a creamy mash of sweet potatoes is served, adding a natural sweetness and a smooth texture. You can also choose to use both brown and white rice with the dish. In addition, we recommend plenty of fresh vegetables with the dish, so it doesn’t become too heavy.
The dish is not only visually appealing, but also a harmonious balance between rich and delicate flavours, which makes it ideal for a cosy chicken parmesan air fryer dinner at home.
