I love beef sirloin in the air fryer, because it feels like food for guests without the panic in the kitchen. In the air fryer, I quickly get a lovely exterior and a calm, even heat on the inside. Here I share my personal approach to what kind of cut beef sirloin is, how I build flavour, and which small tricks make the difference at my house.

Why make beef sirloin in the air fryer?

The air fryer is my turbo oven. It heats up in no time, and the air circulation gives a nice sear without drying out the centre. I can work in manageable portions, keep my focus on the core temperature and let the meat rest while I quickly whip up a salad or a sauce. It’s less logistics, less washing-up—and more control.

What is a beef sirloin?

In short, beef sirloin is a tender, relatively lean cut from the back/loin. It has a clean, meaty flavour and a fine texture that rewards simple seasoning. When I’m shopping, I look for an even shape, a dry surface and—if there’s a fat cap—that it sits neatly and scores easily. I steer clear of heavy marinades; salt, pepper and a couple of well-chosen aromatics do the job. It’s about lifting the meat, not masking it.

Which cut of beef is beef sirloin?

In Danish shops, “beef sirloin” usually refers to the long back muscle from the loin. It can be sold with a fat cap (some then group it with entrecôte/back) or without fat, where it appears leaner and needs gentler handling. It’s not the same as the tenderloin. If in doubt, ask your butcher—names can vary, but the position on the back/loin remains consistent. Voresmad describes both “beef sirloin with fat (entrecote)” and “beef sirloin without fat” as variants from the back, and we work with a scored fat cap on the beef sirloin in the classic method.

To me, beef sirloin tastes of pure meaty joy with a mild, nutty depth. I always start simple: coarse salt and freshly ground pepper. When the meat is good, you don’t need much. If I want to add an extra lift, I use browned butter, garlic and rosemary, or a hint of lemon zest and thyme if I want to keep it fresher. These are small layers that highlight the fillet without overpowering it.

Cooking technique for beef sirloin

I take the meat out well in advance, so the chill from the fridge dissipates. The surface is dried completely—that gives a better colour. The air fryer is preheated, because a hot basket is like putting it on a hot pan: you get that “sizzle” and a quick crust. I trust a thermometer more than a clock. When the centre hits my “sweet spot” (54–56°C for pink, for me), the fillet comes out and rests uncovered. That pause is the difference between “fine” and “wow”. If you have a very slim fillet without a fat cap, go a little more gently and avoid too much heat for too long—that type of meat rewards gentle treatment.

Once you’ve hit your desired core temperature (e.g. 55°C) and let the fillet rest for a couple of minutes, place it in the freezer for 5–6 min (just to chill the outside), then give it 2–4 min of high heat in the air fryer. It gives a crispier crust.

How to slice a beef sirloin

The way you slice it controls the mouthfeel. I cut across the grain into thin, angled slices. If the fillet has a fat cap, I let a little follow each slice for the sake of flavour. The knife is held at a low angle, and I let the roast rest on the board for a minute before I start—that way the slices turn out neater, and the juices stay where they should.

What sides go well with beef sirloin?

On a cosy Saturday, I go all-in on creamy potatoes—their round creaminess flatters the crispy outer crust and the thin, pink slices. On fresher days, I toss green beans with lemon and toasted almonds. And when it needs to be light, I love a bitter salad with pear and a mustard dressing. Three directions. Same fillet. You choose the mood.

Leftovers with serving ideas

Cool completely and cut into thin slices: on rye bread with horseradish and pickled cucumber, in a warm bowl with grains, greens and a splash of jus, or as a quick pasta topping tossed in browned butter and lemon zest. Alternatively, briefly warm the slices in a 120–140°C air fryer and serve with a crisp salad. No new recipes—just easy directions.

Fold the tail piece underneath and tie it lightly for an even thickness. Place it with the thick end facing the fan/heat, measure early in the thick end, and calmly lower the temperature after browning.

How to make it

Prepare & Season

  • Take your 1 pcs beef sirloin out 20 minutes before cooking.
  • Trim the silverskin lightly, but keep the fat cap. Score the fat very shallowly in a diamond pattern.
  • Rub the whole sirloin with 2 tbsp coarse salt (ideally dry-brine uncovered in the fridge for 4–24 hours for extra even seasoning), or at least 30 min. before cooking.
  • Pat the surface completely dry.
  • Rub with 1 tbsp olive oil and 1 tsp freshly ground black pepper.

Preheat & Place

  • Preferably preheat the air fryer for 5 min at 200 °C.
  • Place the sirloin on the rack with the fat side up and airflow all the way around.

Brown

  • Roast

Main Roasting

  • Lower the temperature to 150–160 °C and continue roasting until the core temperature reaches:
    52–54 °C (rare/pink)
    55–57 °C (pink/medium)
    58–60+ °C (more well done)
    The main roasting typically takes 20–35 min after browning. Check the temperature for the first time after Start onlinekøkken uret her and then every 5 min. Do not turn – keep the fat side facing up the whole time.

Rest

  • Take the sirloin out 1–2 °C before your target temperature, place it on a rack/board and let it rest for 15–20 min
    (optionally with a small knob of 20 g butter and 1 bunch rosemary / 1 clove garlic on top).
    Do not cover it – this keeps the crust intact.

Slice & Serve

  • Slice against the grain into thin, angled slices.
    Serve immediately – ideally with creamy potatoes, green beans or a bitter salad.
