  • 1 kg pork loin without rind
     
  • 100 g prunes
     
  • 2 tbsp coarse salt
     
  • 1 tbsp black pepper
     
  • 2 clove garlic
     
  • 1 tbsp dried thyme
     
  • 2 pcs bay leaves
     
  • 2 tbsp olive oil
     
  • 1 pack baconbacon stykker ikon

How to make it

  • Prepare the 1 kg pork loin without rind by cutting it open lengthways so it can be rolled out. Lightly pound the meat with a meat mallet, if needed, to get an even thickness.
  • Spread the 100 g prunes evenly down the middle of the flattened pork loin.
  • Sprinkle the 2 tbsp coarse salt, 1 tbsp black pepper, pressed 2 clove garlic and 1 tbsp dried thyme over the meat.
    Place the 2 pcs bay leaves on the prunes.
  • Roll the pork loin tightly around the filling and tie the roast together with kitchen string or secure with skewers.
  • Brush the outside of the roast with the 2 tbsp olive oil.
  • Wrap the 1 pack bacon around the roast if you like.
  • Preheat the air fryer to 180 °C.
    (Use the preset, or let it run for a couple of minutes before cooking)
  • Place the roast in the air fryer basket and cook at 180 °C for about 60 minutes, or until the roast reaches an internal temperature of 75 °C.

  • Let the roast rest for 10 minutes before carving.
    Remove the bay leaves before serving if you like

Cover it with foil if it browns too much.
