This dish combines the juicy, spiced flavour of rolled pork roast with the sweet, soft texture of prunes, creating a perfect balance between sweetness and umami.
Prepare the 1 kg pork loin without rind by cutting it open lengthways so it can be rolled out. Lightly pound the meat with a meat mallet, if needed, to get an even thickness.
Spread the 100 g prunes evenly down the middle of the flattened pork loin.
Sprinkle the 2 tbsp coarse salt, 1 tbsp black pepper, pressed 2 clove garlic and 1 tbsp dried thyme over the meat.Place the 2 pcs bay leaves on the prunes.
Roll the pork loin tightly around the filling and tie the roast together with kitchen string or secure with skewers.
Brush the outside of the roast with the 2 tbsp olive oil.
Wrap the 1 pack bacon around the roast if you like.
Preheat the air fryer to 180 °C.(Use the preset, or let it run for a couple of minutes before cooking)
Place the roast in the air fryer basket and cook at 180 °C for about 60 minutes, or until the roast reaches an internal temperature of 75 °C.Start the online kitchen timer here
Let the roast rest for 10 minutes before carving.Remove the bay leaves before serving if you like
Notes
Check the roast regularly during cooking to make sure it doesn't get too much colour.Cover it with foil if it browns too much.NB: You can of course also use a ready-made rolled pork roast. Just rub it with the spices in the same way, and cook the roast in the same way as described in the recipe here.
