Fajitas are Tex-Mex at its best: juicy chicken strips and colourful bell peppers with roasted, lightly charred edges, which everyone at the table rolls up in a warm tortilla with exactly the filling they want. Traditionally the dish is made in a smoking hot pan, but the air fryer does the job just as well, and you avoid grease splatter all over the stove.

The chicken breast fillets are cut into thin strips and marinated in lime juice, olive oil, cumin, chilli powder, smoked paprika, garlic and oregano. Then they roast together with red, green and yellow bell peppers and red onion in an airy layer, so the heat reaches everywhere. Finally you put it all together in soft wheat tortillas with grated cheddar, guacamole and salsa – an ideal Friday dinner where the whole family can join in.

Why I love chicken fajitas in the air fryer

I love dishes where everyone gathers around the table and builds their own plate, and fajitas are exactly that kind of dish. The air fryer makes it easy, because the hot air roasts the strips from all sides while you set the table. The marinade with lime, smoked paprika and cumin gives the meat plenty of flavour, and the bell peppers turn sweet and tender with a little bite.

The difference between a pan and an air fryer

In a pan you have to stand at the stove and keep turning everything, and the fat splatters when the marinated chicken hits the hot surface. In the air fryer you spread the chicken and vegetables loosely in the basket, shake it a couple of times along the way and have your hands free in the meantime. You get the same roasted edges that fajitas are known for, but with less smoke in the kitchen and less washing-up afterwards.

My kitchen test of chicken fajitas

I tested the recipe in my Cosori Dual Blaze, where the basket gets heat from both above and below. At 200 °C the chicken and bell peppers browned beautifully on both sides, but I still shake the basket twice per batch so the strips are turned and roast evenly. The most important lesson is to divide the amount into two batches, because if you fill the basket completely, the vegetables steam instead of roasting.

The chicken is done when a meat thermometer in one of the thickest strips reads 75 °C and the meat is no longer pink in the middle. With 15 minutes of preparation, 20 minutes of marinating and 30 minutes of cooking in two batches, the dish takes 65 minutes in total. In my Philips XXL the basket is bigger, but I still divide the amount, because a thin layer is the whole secret behind the roasted edges.

Squeeze a lime wedge over the hot strips just before you roll your fajita. The fresh acidity contrasts with the smoked paprika and lifts the whole dish.

The typical mistakes and how to avoid them

The most common mistake is to fill the basket right up. Then the bell peppers steam instead of roasting, and you end up with soft vegetables without the characteristic edges. Instead, make the dish in two batches, spread the strips loosely and shake the basket along the way. The next mistake is leaving the chicken in the marinade for too long. The lime juice makes the surface soft and mushy if the meat sits for more than 2 hours, so 20 minutes in the fridge is plenty. Finally, it goes wrong when the strips have different thicknesses, because the thin ones dry out before the thick ones are cooked through. Cut both the chicken and the bell peppers into strips of about 1 cm, and cut the chicken across the grain so it stays tender.

How to serve chicken fajitas

Place the platter of chicken and vegetables in the middle of the table together with the sides, so everyone can build their own fajitas:

  • Warm, soft wheat tortillas – allow 2 per person
  • Grated cheddar
  • Guacamole and salsa, homemade or shop-bought
  • Lime wedges to squeeze over the chicken
  • Crème fraîche and fresh coriander
  • Pickled jalapeños for those who want more heat

Storage and reheating

Leftover chicken and vegetables can be stored covered in the fridge for up to 3-4 days. Reheat them in the air fryer at 180 °C for 4-5 minutes, until the strips are heated through. The filling can also be frozen for up to 3 months – let it thaw in the fridge overnight before you heat it. Store the tortillas and sides separately, so they do not turn soggy from the juices of the chicken.

Chicken fajitas in the air fryer is a dish that brings everyone together around the table, and it is easy to adapt if someone wants more chilli or extra cheese. Stick to thin strips and an airy layer in the basket, and you get juicy chicken and roasted edges every time.

FAQ

What is the difference between fajitas and tacos?

Fajitas are strips of meat and vegetables that are cooked at a high heat and served with soft wheat tortillas, so each person rolls their own portion. Tacos are typically smaller corn tortillas or crunchy taco shells with a filling. For fajitas you always use soft tortillas.

How long should the chicken marinate?

20 minutes in the fridge is enough for the marinade to add flavour. Do not leave the chicken for more than 2 hours, because the lime juice makes the surface soft and mushy.

Can I warm tortillas in the air fryer?

Yes, wrap them tightly in foil and warm them at 180 °C for 3 minutes. If you put them loose in the basket, they turn crisp, and the fan can lift them up against the heating element.

How to make it

Preparation

  • Cut 600 g chicken breast fillets into thin strips of about 1 cm. Cut across the grain so the strips stay tender.
  • Mix 3 tbsp olive oil, 2 tbsp lime juice, 2 clove garlic, 2 tsp smoked paprika, 1 tsp cumin, 1 tsp chilli powder, 1 tsp oregano, 1 tsp salt and 0.5 tsp black pepper in a large bowl.
  • Toss the chicken strips well in the marinade, cover the bowl and leave the chicken to marinate in the fridge for 20 minutes.
  • While the chicken marinates, remove the seeds and white membranes from 1 pcs red bell pepper, 1 pcs green bell pepper and 1 pcs yellow bell pepper and cut them into strips of about 1 cm. Peel 1 pcs red onion and cut it into thin wedges.
  • Wash the chopping board and knife after handling the raw chicken. Cut 1 pcs lime into wedges, grate 150 g cheddar and put it out together with 200 g guacamole and 200 g salsa.
  • Add the bell peppers and red onion to the bowl with the chicken and toss everything so the vegetables are coated in marinade too.

Cooking in the air fryer

  • Preheat the air fryer to 200 °C fan.
  • Spread half of the chicken and vegetables loosely in the basket. The layer must not be too thick, otherwise the vegetables will steam instead of getting roasted edges.
  • Cook at 200 °C for 12 minutes. Shake the basket after 4 and 8 minutes so the strips are turned and roast evenly.
  • Check that the chicken is cooked through. A meat thermometer in one of the thickest strips should read 75 °C, and the meat must not be pink in the middle. The vegetables should be tender with lightly charred edges. If it needs a little longer, give it 2 more minutes at 200 °C. Tip the first batch onto a serving dish and cover it loosely with foil.
  • Repeat with the rest of the chicken and vegetables at 200 °C for 12 minutes, and shake the basket after 4 and 8 minutes. Put the first batch back in the basket for the last 2 minutes so everything gets hot again. Check that the chicken has reached 75 °C, tip everything onto the serving dish and cover it loosely with foil again.
  • Wrap 8 pcs wheat tortillas tightly in foil so the parcel cannot be blown up against the heating element. Warm them in the air fryer at 180 °C for 3 minutes, until they are warm and soft.

Serving

  • Serve the chicken and vegetables straight away with the warm tortillas, cheddar, guacamole, salsa and lime wedges, so everyone can fill and roll their own fajitas.

Our notes for the recipe

Tips for a perfect result:
Cut the chicken and bell peppers into strips of the same thickness so they are ready at the same time. Do not overfill the basket: if the strips lie loosely and are shaken during cooking, they get roasted edges instead of steaming. Do not leave the chicken in the marinade for more than 2 hours, because the lime juice makes the surface soft and mushy.
Variation:
Add a chopped jalapeño to the marinade if you want more heat, or use chipotle powder instead of chilli powder for a smokier flavour. Chicken breast fillets can be replaced with chicken thigh fillets, which turn out extra juicy – the time and temperature are the same.
Serving:
Put everything in the middle of the table so everyone can fill and roll their own fajitas. Crème fraîche and fresh coriander also go well with them. Fajitas are served in soft wheat tortillas – not in crunchy taco shells.
Soft tortillas:
Never put the tortillas loose in the air fryer. They turn crisp, and the fan can lift them up against the heating element. Wrapped tightly in foil, they stay soft and warm.
Portion size:
The recipe is made in two batches so the layer in the basket does not get too thick. If you have a dual-drawer air fryer, you can put each batch in its own drawer and cook them at the same time. Allow 2 tortillas per person.
