Ingredients

  • 200 g wheat flour
  • 100 g butter
  • 50 g icing sugar
  • 1 pcs egg yolk
  • 2 tbsp cold water
  • 200 g raspberry jam
  • 2 tbsp icing sugar
  • 1 tbsp freeze-dried raspberries

How to make it

  • Mix 200 g wheat flour and 50 g icing sugar in a bowl.
    Add the cold 100 g butter cut into small cubes and rub it together with the flour until it resembles coarse sand.
  • Add 1 pcs egg yolk and 2 tbsp cold water, and quickly knead the dough together.
    Let the dough rest in the fridge for 30 minutes.
  • Roll out the dough on a piece of baking paper until it’s about 5 mm thick.
    Stamp out shapes or cut the dough into rectangles.
  • Preheat the air fryer to 180°C. Place the cut-out pieces of dough on the baking paper and into the air fryer basket.
    (Preprogram it, or let it run for a couple of minutes before cooking)
    Bake them for 8-10 minutes, or until golden brown.

  • Gently warm 200 g raspberry jam in a small saucepan so it’s easy to spread.
  • When the biscuits have cooled, spread a thin layer of raspberry jam on half of them, and place another biscuit on top.
  • Decorate with a layer of icing made from 2 tbsp icing sugar and 1 tbsp freeze-dried raspberries.
