Raspberry slices in the air fryer are a quick and easy way to make this classic Danish treat. With crisp shortcrust pastry and a sweet raspberry filling, they're perfect for afternoon coffee or as a little snack.
Mix 200 g wheat flour and 50 g icing sugar in a bowl.Add the cold 100 g butter cut into small cubes and rub it together with the flour until it resembles coarse sand.
Add 1 pcs egg yolk and 2 tbsp cold water, and quickly knead the dough together.Let the dough rest in the fridge for 30 minutes.
Roll out the dough on a piece of baking paper until it's about 5 mm thick.Stamp out shapes or cut the dough into rectangles.
Preheat the air fryer to 180°C. Place the cut-out pieces of dough on the baking paper and into the air fryer basket.(Preprogram it, or let it run for a couple of minutes before cooking)Bake them for 8-10 minutes, or until golden brown.Start the online kitchen timer here
Gently warm 200 g raspberry jam in a small saucepan so it's easy to spread.
When the biscuits have cooled, spread a thin layer of raspberry jam on half of them, and place another biscuit on top.
Decorate with a layer of icing made from 2 tbsp icing sugar and 1 tbsp freeze-dried raspberries.
