Add 100 g butter and rub it into the flour mixture until you have a crumbly texture.Add 1 pcs egg yolk and 1 tbsp water, and quickly bring the dough together. Shape the dough into a flat rectangle and let it rest in the fridge for 30 minutes.
- Make the tosca topping:Melt 100 g butter, 100 g sugar and 2 tbsp milk in a saucepan over medium heat.Add 100 g flaked almonds once the sugar has dissolved.Let the mixture simmer, stirring, for a couple of minutes until it turns golden and thick.
- Prepare the air fryer:Preheat your air fryer to 180°C.(Pre-program it, or let it run for a couple of minutes before cooking)Line the basket with baking paper.
- Roll out the dough: Roll out the shortcrust pastry to a thickness of about 0.5 cm and cut into the pieces you want.
- Assemble the cake: Spread the tosca topping evenly over the rolled-out pieces of pastry.
