Lemon cake is a delicious, airy cake that melts on your tongue with a refreshing citrus flavour. This recipe is adapted to be made in an air fryer, giving you a quick and easy way to enjoy this lovely cake.
In a bowl, whisk 2 pcs eggs and 150 g sugar together until pale and fluffy.
Add the melted 125 g butter, 1 dl milk, and the juice and zest of 1 pcs lemon to the egg mixture, and stir well.
Sift 200 g plain flour, 1 tsp baking powder and 1 pinch salt into the egg mixture, and fold gently until the batter is smooth.
Spread the batter into a tin that fits your air fryer. Remember to grease the tin if it isn't non-stick.
Set the air fryer to 160℃Place the cake tin in the air fryer and bake the cake for 15-20 minutes, or until golden and baked through. Remember to check the cakes after about 15 minutes, as the baking time can vary depending on your air fryer.Start the online kitchen timer here
When the cakes are done, take them out of the air fryer and let them cool in the tin for a few minutes.
Once the cakes have cooled completely, dust them with 1 tbsp icing sugar before serving.
Notes
- You can adjust the lemon flavour by varying the amount of lemon juice and zest to taste.- Make sure not to overfill your air fryer, so the cakes have room to rise and bake evenly.
