Mississippi Mud Pie is a decadent chocolate dessert with a crisp crust and a rich, fudgy filling. Made in the air fryer, you get the same delicious flavour, just faster.
Crush the 200 g Digestive biscuits finely.(For an extra strong chocolate flavour, you can use coarse chocolate biscuits)
Mix the crushed biscuits with the melted 100 g butter.
Press the biscuit mixture into the bottom of the springform pan and up the sides to form a crust.
Put the crust in the freezer for 10 minutes to set.
Make the filling:
Melt the 150 g butter and 200 g dark chocolate together over low heat in a pot.Stir until smooth and let it cool slightly.
Whisk the 200 g sugar and 3 pcs eggs together in a bowl until the mixture is light and fluffy.
Add the melted chocolate mixture to the egg mixture and stir well.
Add the 2 tsp vanilla extract, 100 g wheat flour, 1/2 tsp salt and 50 g cocoa powder, and stir until everything is well combined.
Gently fold 150 ml of the cream into the batter.
Baking:
Pour the filling into the prepared crust.
Preheat the air fryer to 160°C.(Use the preheat function, or let it run for a few minutes before cooking)
Bake the pie in the air fryer for 25-30 minutes, or until a toothpick comes out with moist crumbs (not wet batter).Start the online kitchen timer here
Whipped cream
Whip 100 ml of cream into a light whipped cream.
Cooling and serving:
Let the pie cool completely in the pan on a wire rack.
Carefully remove the sides of the springform pan and gently take out the pie.
Serve with a little whipped cream (or vanilla custard) on top, and garnish with grated chocolate or chocolate shavings.
Notes
-Make sure to check the pie after 20 minutes, as air fryers can vary in efficiency.-Let the pie rest in the fridge for at least 2 hours, ideally overnight.
