A delicious and easy raspberry Swiss roll that can be made quickly in an air fryer. This recipe combines the sweet and slightly tart flavour of raspberries with a light and soft sponge roll – perfect for an afternoon coffee or as an elegant dessert.
Whisk 4 pcs large eggs, 100 g sugar and 1 tsp vanilla sugar together into a light, airy mixture.
Sift 100 g plain flour and 1 tsp baking powder together and gently fold it into the egg mixture with a spatula.
Line the air fryer basket with baking paper. Spread the batter evenly over the baking paper.
Bake in the air fryer for about 8-10 minutes, or until the Swiss roll is golden and baked through.Start the online kitchen timer here
Place a sheet of kitchen paper on a flat surface and dust lightly with icing sugar. Turn the baked Swiss roll out onto the kitchen paper.
Spread 200 g raspberry jam or:Fresh raspberries mashed with 2 tbsp sugar, over the warm Swiss roll.
Gently roll up the Swiss roll with the help of the kitchen paper.Let it rest with the seam facing down.
Once the Swiss roll has cooled, dust it with 1 tbsp Icing sugar before serving.
Notes
-For a more intense raspberry flavour, you can mix fresh raspberries into the jam.-The Swiss roll can also be filled with whipped cream for a more decadent dessert.
