Peel 800 g sweet potatoes and cut them into even, thin sticks about 1 cm thick. The more even the sticks are in size, the more even the crispiness will be.
Toss the sticks thoroughly in a bowl with 2 tbsp olive oil, 1 tsp salt and 0.5 tsp freshly ground pepper, so that all the pieces are evenly coated.
Cooking in the Air Fryer
Preheat the air fryer to 200 °C convection.
Place the fries in the basket in a single layer without overlapping. Cook at 200 °C for 15-18 minutes, shaking the basket about halfway through so the fries become evenly crispy on all sides.
Serve immediately while the fries are hot and crispy.

Tips for the perfect result:
Cut the sticks to an even thickness — this is the most important factor for even crispiness. Avoid overcrowding the basket; the fries should ideally not lie on top of each other, or they will turn soft instead of crispy.Variation:
Season with paprika, garlic powder, or smoked paprika before cooking for extra flavour. A sprinkle of parmesan or fresh parsley scattered over after cooking lifts the dish even further.Serving:

If your air fryer is smaller, you can make the fries in two batches and keep the first batch warm in the oven at 100 °C while you make the next.
