Sweet potatoes are tricky in the oven. They contain more water and natural sugar than regular potatoes, and that often results in soft, soggy sticks when baked. The air fryer solves exactly that. The fast hot-air circulation pulls the moisture out of the surface while the starch caramelises and forms the crispy crust you’re after. The inside stays soft and warm without turning watery.
There’s a big practical advantage too. I skip preheating the oven, and the amount of oil is minimal — one tablespoon is plenty for two medium-sized sweet potatoes. The energy use is a fraction of the oven’s, and the washing up is just the basket and a cutting board.

Where the oven typically needs 25-30 minutes at 220 °C plus more oil to give comparable crispiness, the air fryer manages it in 14-18 minutes at 200 °C with significantly less fat. The sticks don’t need to be turned manually along the way either — one shake halfway through is enough to distribute the heat evenly.
My kitchen test of sweet potato fries
I’ve tested the sweet potato sticks in both my Cosori Dual Blaze and my Philips XXL. In the Cosori I can split the portion between the two baskets and make a larger batch at once — handy when the whole family needs something on the table. The sweet spot landed at 200 °C for 16 minutes with one shake after 8 minutes. The sticks got a distinct outer crust and a soft, warm inside without being soggy. Thinner sticks around 0.8 cm gave the best crispiness; if I went over 1.2 cm thick, the inside got too moist and the outside lost its bite. In the Philips XXL I ran the same time and temperature and got similar results for a smaller portion in a single layer.
Cut the sticks to an even thickness. Unevenly thick sticks give you either burnt or soft results in the same batch — it’s the most common mistake with sweet potatoes.

The typical mistakes and how to avoid them
The first mistake is overcrowding the basket. When the sticks lie on top of each other, they steam instead of crisping up, and the result is soft fries with no bite. Lay them in a single layer with space between them, and cook in two batches if the portion is large. The second classic is using too little oil. Without a thin layer of fat, the starch doesn’t get the caramelisation that creates the crunch, so stick to a minimum of one tablespoon per two medium-sized potatoes. The third mistake is salting before cooking. Salt draws moisture out of the sweet potatoes, and that moisture makes the sticks wet in the air fryer. Season after cooking, not before — it’s one of the most important details.
How to serve sweet potato fries
The sticks work both as a side dish and as a snack. My favourite is with a creamy dip and a little fresh parsley scattered over after cooking.
- As a side dish with a burger, grilled chicken or a good steak
- With aioli, chipotle mayo or homemade ranch as a dip
- Sprinkled with paprika or chilli flakes after cooking for extra depth
- As a pure snack for TV night with a creamy dressing
Storage and reheating
The fries taste best freshly made, but can be stored in an airtight container in the fridge for up to two days. Reheat them in the air fryer at 180 °C for 4-5 minutes — that way they regain much of their original crispiness. The microwave is a bad idea, as the moisture makes them soft and unappetising.
Sweet potatoes in the air fryer are one of the simplest upgrades you can make to the weekly menu. Once you’ve got the technique down and the basket isn’t overcrowded, you end up with sticks that look like the restaurants’ — no deep-frying and no waiting.
