Why make Pommes Anna in the air fryer?

Making Pommes Anna in an air fryer has many advantages. First and foremost, it is time-saving compared to the traditional method. The air fryer also creates a crispy surface, which is one of the hallmarks of a successful Pommes Anna. Its compact size and fast heating time make it easy to prepare the dish for smaller gatherings.

In addition, the air fryer is energy-efficient, which makes it a good solution for those who want to reduce their energy consumption in the kitchen. The rapid air circulation means that the potatoes are cooked evenly and get a deliciously crispy surface.

Where does this Anna potatoes dish come from?

Pommes Anna is a French dish believed to have been created in the mid-19th century during the reign of Napoleon III. It is often credited to Adolphe Dugléré, a famous chef who worked at the Café Anglais in Paris. Legend has it that he named Anna potatoes after one of his favourite customers, the actress Anna Deslions.

This classic quickly became a favourite in many restaurants and among home cooks, thanks to its delicious flavour and simple ingredients. Traditionally, potatoes and plenty of butter were used, and the dish was baked in a heavy cast-iron pan, which gave the dish a crispy crust while the inside remained tender.

What is the flavour profile of Pommes Anna?

Pommes Anna has a delicate flavour that balances between the natural sweetness of the potatoes and the rich, nutty taste of the butter. The simple seasonings – often just salt and pepper – leave room for the potatoes’ characteristic flavour. Meanwhile, in some recipes, plenty of butter adds a rich, almost caramelised flavour to the layers.

The combination of the crispy surface and the tender layers underneath makes this dish a delicious texture and flavour experience. When the potatoes are cooked slowly and in layers, they achieve an even tenderness, while still holding their shape and giving a beautiful appearance on the plate.

Brush each layer with melted butter as directed. In addition, add a sprinkle of freshly chopped herbs, such as thyme or rosemary, between the layers. This adds a subtle but delicious flavour.

How do you get the potato dish evenly tender and crispy at the same time?

To ensure that Pommes Anna gets the perfect balance between a crispy surface and an even tenderness inside, it is important to choose the right potatoes and cook them correctly. Par-boiled potatoes are recommended, as they hold their shape better and give an even consistency.

Cut the potatoes into very thin slices, preferably using a mandoline, so they cook evenly. Layer the slices, brush them with butter between the layers, and press the layers together to compress them. This ensures that the dish holds its shape during cooking and gives a crispy edge.

In the air fryer, it is important to cook the dish at a moderate temperature of around 180°C. Check along the way to make sure the top does not get too dark. Let the dish rest for a few minutes after cooking, so the layers settle and it becomes easier to cut into slices.

What do you serve with Pommes Anna in the air fryer?

Pommes Anna is a versatile dish that can be served as a side to many different meals. It goes particularly well with meat dishes such as beef, lamb or poultry. The rich flavour and crispy texture pair well with both grilled steaks and roast chicken.

The dish can also be paired with a light salad or grilled vegetables to create a complete meal. It also works excellently as part of a buffet or as a vegetarian main course in itself, with a little crème fraîche or fresh herb dressing on the side.

Conclusion on Pommes Anna in the air fryer

Pommes Anna in the air fryer is a modern twist on a French classic. By taking advantage of the air fryer’s fast and energy-efficient cooking, you can easily achieve the perfect balance between crispy and tender texture. With its rich flavour and beautiful appearance, this dish is ideal for both everyday meals and more festive occasions.
