Zucchini cake

  • 200 g grated zucchini
  • 150 g sugar
  • 1 tsp vanilla sugar
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • 2 pcs eggs
  • 100 ml oil
  • 150 g plain flour

Cream cheese frosting

  • 100 g cream cheese
  • 50 g butter
  • 100 g icing sugar
  • 1 tsp vanilla sugar

How to make it

  • Grate 200 g grated zucchini and gently press to remove excess liquid.
  • Whisk 2 pcs eggs, 150 g sugar and 1 tsp vanilla sugar together in a bowl until light and fluffy.
  • Add 100 ml oil and the grated zucchini, then mix well.
  • Mix 150 g plain flour, 1 tsp cinnamon, 1/2 tsp baking powder and 1/2 tsp bicarbonate of soda, then sift into the batter.
  • Stir until the batter is smooth and even.
  • Pour the batter into a springform pan for the air fryer and place it in the air fryer.
  • Bake at 160°C for 15-18 minutes.

  • Whisk 100 g cream cheese, 50 g butter (should be slightly soft), 100 g icing sugar and 1 tsp vanilla sugar together to make a creamy cream cheese frosting.
  • Let the cakes cool, then top with the cream cheese frosting.
